does anyone know how to convert from RMP to meters per min, or if it is even possible?

Yes you can convert that, if you know the circumference of the wheel.

For example, if a wheel is exactly 1 meter in circumference, than RPM = meters/minute. If the wheel is 2.5 meters in circumference than 1 RPM = 2.5 meters/minute

RPM is revolutions/minute. The distance the wheel travels (in meters) in one revolution is how many meters it travels.

If you supply the missing dimension of time then you can.

Power = Energy / Time

You need two to calculate the third.
