2)  gf/inch to CN/cm

I am not familiar with the unit "CN", but I'll assume it is cN or centinewton.

1 gram-force = 0.980665 centinewtons
1 inch = 2.54 centimeter

1 gram-force/inch *  (0.980665/2.54) = 0.386089 centinewtons/centimeter

Just multiply g/in by 0.386089 to get cN/cm.

The term gram and gram-force are the same as far as your units go.  The correct way to say it is gram-force, to distinguish it from gram-mass, but isn't really necessary.
